{ Recipe } West Lake Beef Soup 西湖牛肉羹

Winter is finally here! This morning was freezing cold, a bowl of soup can surely warm me up! And this is the only thing that I like about winter... Talking about soup, it reminded me of  the soup I made the other night -- West Lake Beef Soup.

Why West Lake? To be honest, I have no idea. It could be because it is originated from the area around West Lake or this soup is made with the beef there. Whatever the reason is, doesn't really bother me. It is the taste that matters.

This is one easy recipe that everyone can make. Ingredients are also easy to get. If you want some soup to warm up your night, try this tonight :D 



  
West Lake Beef Soup   

makes 4 | prep  10 mins | cook 30 mins | Chinese

{ adapted and modified via Day Day Cook }


[ Ingredients ]

Main Ingredient A


150 g mince beef
80 g frozen green peas
6 dried shiitake mushrooms, thinly sliced
80 g enoki mushroom, cut into 2 cm length
1 tbsp chopped spring onion 
80 g tofu
750 ml chicken stock 
2 tsp vegetable oil
2 egg white

Marinate 

2 tsp oyster sauce 
1 tsp light soy sauce
1/4 tsp chicken powder (optional)
1/2 tsp corn flour
2 tsp water

Seasoning

2 tsp oyster sauce
1/2 tsp soy sauce
1/8 tsp salt
1 tsp sugar
few drops of sesame oil
pinch of ground white pepper

Thickening

1 tbsp corn flour
4 tsp water

[ Method ]

1 Mix Marinate and beef together and marinate for 15 mins.

2 Heat  the chicken stock in a pot until boil. Add in all Main Ingredient A except egg white. Slowly stir until the beef float and become loose

3 Add in Thickening and off the heat. Finally, stir in the egg white to make egg drop.
